These cookies are easy and super quick to make; they are worth trying in a keto version.
- Half a lemon
- 2 tablespoons of olive oil
- 20 ml water
- 20 g vanilla extract
- 240 g of almond flour
- 30 g erythritol powder
- 1 pinch of salt
Preparation: Wash and dry the lemon. Peel it and then cut it into wedges, also removing the seeds. Turn on the oven and preheat to 180 degrees. Place the lemon wedges, water, olive oil and vanilla extract in the bowl of a blender. Blend at medium speed until smooth. Place the mixture in a bowl and add the almond flour, erythritol, and a pinch of salt. Start stirring with a whisk until the mixture has thickened. Place some baking paper on a baking sheet, take the dough and form it into balls that you then need to lay on the baking sheet. Lightly crush the balls and place in the oven. Bake in a preheated oven at 180° for 10-12 minutes. If you wish, you can make the glaze with 30 g of erythritol powder and 10 ml of lemon juice. Place the sweetener in a bowl, add the lemon juice a little at a time, and stir with a whisk until you get a smooth glaze. Take the cookies out of the oven and let them cool. Now, you can frost the cookies.
