INGREDIENTS
  • 400 gr fresh spinach to boil or frozen
  • 200 g of ricotta
  • 1 pinch of salt
  • nutmeg to taste
  • 1 egg
  • 80 g of Grana Padano DOP
  • 50 g clarified butter
  • 6 sage leaves
  • toppings for garnish

Preparation
We take the clean and washed spinach and boil them, then we squeeze them well


In a bowl, pour the well-drained spinach, the ricotta, the egg and the Parmesan cheese and mix everything together.


We take a baking tray with non-stick paper and with the help of two spoons we form our gnudi and place them on top.
We bake at 180° for 20 minutes.
Once cooked in the oven, let it cool and we can sauté them in a pan with a knob of butter and sage.
