Source of vitamin K

Vitamin K plays an important role in blood clotting and helps improve heart and bone health. Spinach contains fat-soluble vitamin K1, so for better absorption, you should use it with fat-there’s nothing easier when you’re in ketosis.

Keto Tuscan Gnudi

Popeye’s meatballs.
INGREDIENTS

  • 400 g fresh spinach to be boiled or frozen
  • 200 g ricotta cheese
  • 1 pinch of salt
  • q.b.nutmeg
  • 1 egg
  • 80 gr Grana Padano PDO
  • 50 gr clarified butter
  • 6 sage leaves
  • q.b.grain for garnish

Preparation

We take the cleaned and washed spinach and boil them, after which we squeeze them well

In a bowl, pour the well-drained spinach, ricotta cheese, egg and parmesan cheese and mix everything together.

We take a baking sheet with nonstick paper and with the help of two spoons form our gnudi and place them on top.

Bake at 180° x 20 minutes.

Once cooked in the oven , let them cool and we can sauté them in a pan with a knob of butter and sage.
